With the holidays just around the corner, I wanted to share my Aunt Becky’s recipe for a sweet potato souffle.

Every year during Christmas time, I do my best to get all my kids together my house. It’s the only day of the year that I really do any cooking and I usually recruit one of my best friends to help me. Years ago my Aunt Becky fixed this recipe at one of our family gatherings and my husband loved it. He talked about it several times over the years so last year I decided I was going to surprise him by making it. Of course it could never be as great as my Aunt Becky’s but it turned out pretty good.

Aunt Becky’s Best Sweet Potato Souffle

3 cups – sweet potatoes, cooked and mashed

1 1/2 cups – brown sugar, packed and divided

2 – large eggs, slightly beaten

1 tsp. – vanilla extract

1/2 cup – milk

3/4 cup – butter, melted and divided

1/3 cup – flour

1 cup – chopped pecans

Heat oven to 350.

In a large bowl combine: sweet potatoes, 1 cup brown sugar, eggs, vanilla, milk and 1/2 cup of the melted butter. Blend thoroughly and spoon mixture into a baking dish.

Topping:

In another large bowl combine: remaining brown sugar, flour, remaining melted butter and chopped nuts. Blend thoroughly and sprinkle mixture over the sweet potato souffle.

Bake for 35 to 40 minutes until filling is hot and topping has browned.

    this, like you wrote the book in it or something. I think that you could
    do with a few pics to drive the message home a little bit, but other than that, this is fantastic blog.
