In my early 20’s during my first marriage, I had the bright idea that I would try to cook Thanksgiving dinner at my house. I thought it would be a nice jester to give my momma a break since she had always cooked for all the holidays. I gathered all the recipes I needed but I wanted to cook one of my momma’s dishes, macaroni and cheese casserole. I called her up and asked her to tell me exactly what I needed for ingredients and to tell me exactly what I needed to do with them. I wrote it all down and on my way I went. I started early that morning preparing my first Thanksgiving dinner and I was so proud because for me it was a honor to be able to cook for the best cook I had ever known. Once everyone arrived, we said the blessing and began to chow down. After a few minutes my mother-in-law calls my name and tells me everything tastes good but the macaroni seems a bit chewy. My momma whips her head around to me and asks “did you boil the noodles?” and my reply was “did you tell me to?”. She continues on to tell me that everyone knows to boil the noodles but my argument was that I asked her to tell me exactly what I needed to do. Of course over the years she shared this story for laughs but truth is from that point on, I have always boiled the noodles….

Baked Mac & Cheese

2 – cups macaroni (follow the directions on the box)

1 – stick of butter

12 oz. – yellow cheddar cheese

4 oz. – mozzarella cheese

5 – cups milk

Salt and pepper to taste

Preheat oven to 350 degrees. Layer macaroni, butter and cheese and pour milk over the top of the top layer. Bake for 1 hour.

  1. Yummy! My gram, before she passed away, taught me how to make homemade mac and cheese – but I never wrote it down cause I figured she’d be around for a while. This is one of the closest recipes I have found, so delish!
