Last year my friend, Cynthia brought some peanut butter fudge to work that her husband had made for the holidays. Everyone loved it so much, she had to ask her husband to make a second bigger batch for our group. (We love to eat, especially sweets!) Right before we left for Christmas shutdown, Cynthia shared the recipe with me and now I want to share it with you.

8 oz, – unsalted butter

1 cup – peanut butter

1 lb. – powdered sugar

1 tsp. – vanilla

Microwave the peanut butter and butter in the same bowl for 2 minutes on high, then stir. Put it back in the microwave for another 2 minutes. Next add the vanilla and powdered sugar. Stir until completely mixed and smooth. Spread into a greased 8x8x2 pan. I put mine in the refrigerator for at least 2 hours before I cut them into squares.
