Last year I had visited my Aunt Billie and I was telling her that I really don’t have time to cook because of my crazy schedule. Everyone in my family knows that I never really learned to cook growing up so she told me that she has some recipes that are real simple to do that are really good. I didn’t get them from her at the time because I needed to get home that day.
A few months later, she asked me for my address because my grandma had some items and pictures from my childhood that she wanted to send me. When I received the package, inside were several recipes that my Aunt Billie wanted to share with me and I thought that was so sweet. Below are three of the recipes that were sent in the mail with love.
Cheeseburger Casserole
1 – lb. lean ground beef
1/2 – tsp. salt
1/2 – tsp. pepper
1/4 – cup chopped onion
1/4 – cup chopped green pepper
1 – oz. can tomato sauce
4 – slices of American cheese
1 – 6oz. can biscuits
Brown ground beef in large skillet over medium heat stirring meat until it crumbles. Drain grease, return to pan. Add salt, pepper, onion and green pepper then cook for 1 minute. Add tomato sauce, reduce heat and simmer for 15 minutes. Next spoon into 8 inch square backing dish and add the cheese on top of the beef. Flatten biscuits and put on top of the cheese. Bake at 350 for 20-25 minutes until biscuits are golden brown. She put a note at the end saying that it is “really good”.
Homemade Vegetable Soup
3 to 4 – cans of Veg-All vegetable soup
2 – cans of diced tomatoes
1 – lb. or more of hamburger meat
2+ – cups of water
Brown hamburger meat until done. Mix all ingredients in a pot. Cook until steaming hot. Add salt & pepper to taste.
Boneless chicken breast
1 – can cream of chicken
1 – can cream of mushroom
1 – onion chopped
1 – 8oz. sour cream
1 – bag of rice (boil in the bag type)
Potato chips
Boil chicken and rice until done. Set aside to cool. Tear chicken into bite size pieces. Mix chicken, rice and all other ingredients in a large mixing bowl. Add salt & pepper to taste. Pour into a casserole dish and cover. Crumble up some potato chips and scatter over casserole before baking. Bake at 375 for 20 minutes covered then uncover and bake for an additional 15 minutes. She left a little side note: ” I get the chicken bits in a bag at store. I don’t boil chicken to me that takes too long”.
