Straight from her cookbook, Martina’s Kitchen Mix, Martina shares one of her childhood favorites: fried cornmeal “mush”.
Fried Cornmeal “Mush”
Serves: 4 Total time: 8 hours 30 minutes
4 – cups water
1 – cup plain white cornmeal
1 – tsp. kosher salt
1/3 – cup vegetable oil
Butter, jelly or honey to serve
- Bring 3 cups of the water to boil in a 3 1/2 – quart saucepan. Whisk together the remaining 1 cup water, cornmeal, and salt in a medium bowl. Pour the cornmeal mixture into the boiling water, whisking constantly. Cook over medium until thickened, stirring frequently, about 5 minutes. Cover and cook on low until very thick and bubbly, about 5 minutes.
- Pour the mixture into a buttered 9×5-inch loaf pan. Let it cool completely. Cover with plastic wrap and refrigerate 8 hours or overnight.
- Turn out onto a cutting board and slice into 1-inch slices. Heat the oil in a large nonstick skillet over medium-high. Cook the slices, 3 minutes on each side, or until golden brown.
- Serve warm with butter, jelly, or honey, or eat plain.
